It’s a great morning! Let’s get cooking!
You’ll need:
- 2 medium Sweet Potatoes, chunked, roughly 1″ x 1/2″ pieces
- 2 Tbsp Olive Oil
- 1/2 cup Water
- 16 oz slice Mushrooms, I used portobello mushrooms
- 1 small head of Cauliflower, cut into florets
- 1 Yellow Onion, roughly chopped
- 1 medium Red Pepper, seeded and roughly chopped
- 1 tsp Dill Weed
- 1 tsp Italian Seasoning
- Salt and Pepper to taste
- 1 – 15 oz can Chickpeas, drained and rinsed
- 5 oz Spinach and Arugula Blend
Let’s Make It!
- Add Oil, Water and Sweet Potatoes to a large skillet, over medium heat. Cover and cook until fork tender. About 5 minutes
- Add Mushrooms and Cauliflower, cover and cook for another 5 minutes.
- Add Onion and Pepper, stir and cook for 5 minutes.
- Add Seasonings, Salt and Pepper, stir.
- Add Chickpeas and the Spinach and Arugula Blend, cook until the greens have wilted.
