Let’s Make Breakfast! Vegan Hash

It’s a great morning! Let’s get cooking!

You’ll need:

Let’s Make Breakfast! Vegan Hash
  • 2 medium Sweet Potatoes, chunked, roughly 1″ x 1/2″ pieces
  • 2 Tbsp Olive Oil
  • 1/2 cup Water
  • 16 oz slice Mushrooms, I used portobello mushrooms
  • 1 small head of Cauliflower, cut into florets
  • 1 Yellow Onion, roughly chopped
  • 1 medium Red Pepper, seeded and roughly chopped
  • 1 tsp Dill Weed
  • 1 tsp Italian Seasoning
  • Salt and Pepper to taste
  • 1 – 15 oz can Chickpeas, drained and rinsed
  • 5 oz Spinach and Arugula Blend

Let’s Make It!

  1. Add Oil, Water and Sweet Potatoes to a large skillet, over medium heat. Cover and cook until fork tender. About 5 minutes
  2. Add Mushrooms and Cauliflower, cover and cook for another 5 minutes.
  3. Add Onion and Pepper, stir and cook for 5 minutes.
  4. Add Seasonings, Salt and Pepper, stir.
  5. Add Chickpeas and the Spinach and Arugula Blend, cook until the greens have wilted.
