The Sauce – A Balsamic Vinaigrette

This dressing is a favorite of my husband, so much so that he’s nicknamed it “the sauce”. He uses it on nearly all of his salads, save for our Taco Leftovers Salad (link coming soon). We eat a fair amount of salads, as I’m a vegetarian, salads are easy to make and I’m the family cook. This vinaigrette is vegan, simple and full of zest, making it perfect for pairing with nearly all your salads.

With any salad dressing, ingredients are vital and quality is key, but sometimes quality comes at a cost. This recipe uses your typical vinaigrette ingredients; extra virgin olive oil, balsamic vinegar, garlic, salt and pepper, but they are enhanced through aging or country of origin. I’m lucky to have a grocery store that cares about quality and flavor, with such offerings like Single Source, Small batch Greek Extra Virgin Olive Oil, Italian Barrel Aged Balsamic Vinegar and New York State Barrel Aged Maple Syrup, all of which lend a complexity to this simple salad topper. Please know, you do not have to use these ingredients, your favorite extra virgin olive oil, balsamic vinegar and maple syrup are going to make an amazing vinaigrette. Lets get going!

Balsamic Vinaigrette (makes 8-10 servings)

  • 1/4 cup Italian Barrel Aged Balsamic Vinegar
  • 1/2 cup Greek Extra Virgin Olive Oil
  • 1 tsp vegan Dijon mustard
  • 2 tsp Barrel Aged Maple Syrup
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 2 roasted or confit garlic cloves, minced or pressed

Lets put it together!

  1. Start with adding all the ingredients to a large measuring cup or salad dressing shaker.
  2. Shake vigorously, until combine. If using a large measuring cup, whisk or blend to combine.
  3. Add to your favorite salad.

Remember to refrigerate any leftovers.
