Veggie and Hummus Sandwich

This is our favorite way to enjoy my At Home Hummus and Our Favorite Sourdough Loaf. This sandwich is tasty and easy to make. Its great for a quick dinner or to take to work for lunch.

Let’s get into it!

Veggie and Hummus Sandwich (Serves 1)

  • 2 slices of Our Favorite Sourdough Loaf, your favorite bread, your favorite wrap or 2 large romaine leaves
  • 1-2
  • heaping Tbsp At Home Hummus, or your favorite Hummus
  • 1 Tbsp Vegan Mayonnaise
  • 2 Tbsp Mixed Sprouts
  • 2 Tbsp Micro Greens
  • 2 leaves, trimmed Romaine Lettuce Leaves
  • 3 slices Vegan Provolone Cheese
  • 5 slices of Cucumber
  • 2 slices of Tomato
  • thinly sliced Red Onion, or Pickled Red Onion

Optional Sandwich Additions

  • Roasted Red Peppers
  • a Pinch of Salt and Pepper
  • Dash of Balsamic Vinegar
  • Banana Peppers or Pepperoncini
  • Fresh Bell Pepper Slices
  • Pickled Bell Pepper Rings
  • Sweet or Dill Pickle Slices
  • Sliced Radish, fresh or roasted
  • Fresh Herbs

Put it together!

  1. On one slice of Our Favorite Sourdough Loaf, spread a heaping 1-2 Tbsp At Home Hummus. On the other slice, spread Vegan Mayo.
  2. On one slice of bread, put the Sprouts, and on the other slice put the Micro Greens.
  3. Next, add sliced Cucumber and Romaine Lettuce on one slice. On the other slice, add Tomato slices, Red Onion slices and Vegan Provolone Slices, folded in half.
  4. Carefully close your sandwich, slice in half.
