Smashed Chickpea “Tuna” Salad

This Smashed Chickpea “Tuna” Salad is a go to for lunch meals. It’s fun, versatile, convenient and utilizes a pantry staple in my house. It’s full of complex carbs, fiber, crunch and works well on classic white bread, sourdough, wheat bread and even crackers, lettuce leaves or cucumber slices. This recipe is easily veganized by substituting vegan mayonnaise.

Smashed Chickpea “Tuna” Salad

  • 1 15 oz Can of Chickpeas, drained and smashed
  • 2 tsp Dill, dried
  • 1/4 cup Red Onion, diced
  • 1 medium rib of Celery, diced (about 1/8 cup)
  • 1 medium Carrot, shredded (about 1/8 cup
  • 1/4 cup Mayonnaise or Vegan Mayonnaise
  • 1/2 tsp Balsamic Vinegar, optional
  • 1/4 tsp ground Pepper
  • 1/2 tomato, diced or tomatoes, sliced
  • 1/2 cup Lettuce, shredded or whole lettuce leaves

To put this together!

  1. In a medium bowl, smash chickpeas. You want the chickpeas to have some texture, so use a potato masher or potato ricer on the largest setting.
  2. Add all prepared remaining ingredients to bowl, mix.
  3. (Optional Step) if choosing to use whole lettuce leaves and tomato slices, place those on your bread.
  4. Serve on your favorite bread, over a bed of lettuce, crackers, cucumber slices or however you like
